Ingredients of Seafood Supper

  1. You need 1 bag of mixed frozen seafood, defrosted.
  2. You need 1 of onion, diced.
  3. It's 1 clove of garlic, crushed.
  4. You need 1 tin of plum tomatoes.
  5. You need Splash of Fish sauce.
  6. You need Pinch of dried chilli.
  7. Prepare 1 tbsp of tomato paste.
  8. It's of Rapeseed oil for sautéing.
  9. It's 1 of lemon.

Seafood Supper instructions

  1. Sauté diced onion until soft. Add crushed garlic and dried chilli and cook for a minute over a low heat..
  2. Tip in the tinned tomatoes and break up. Loosen with approx 50ml hot water..
  3. Add a splash of fish sauce to season..
  4. Cool, covered for 10 minutes..
  5. Check seasoning of the tomatoes. Add a grind of black pepper. Don’t add salt at this stage as the seafood is salty..
  6. Add seafood to the hot tomato mix, give a thorough stir and heat through for 5 minutes or until piping hot..
  7. Add a squeeze of lemon juice check seasoning and adjust if needed..
  8. Serve with your favourite vegetables and perhaps some rice or crusty bread if you’re especially hungry..
